Pepperoni Pizza Pasta

I’m always on the lookout for dishes that my kids will actually eat and that can be prepared ahead of time. While it sounds easy, it’s actually pretty hard. I found this recipe and decided to give it a go. I was able to throw it together on Sunday so it was ready during the week, and my kids actually ate it! Pastas are usually a safe bet with the under 4 crowd in my house. We’ve made it several times since and it’s always been a hit. What’s great about this dish is that you can add anything you’d like to make it your own. Although it’s not pictured, we enjoy making our pizza casserole more of a supreme variety. We add mushrooms, green onions, and black olives. Do what you want. Add pineapple and anchovies if it lights your fire!
