Around here, a good pork chop always goes down easy. I found this recipe and thought it would be good to throw in our mix of ways to cook pork. These are quick to whip together and have amazing flavor. Plus, I get to really put my Le Creuset to the test and that always makes me feel a little like Julia Child. Win-win, am I right?

Weight Watchers Points+ = 8
- 1 pound pork chops, thin cut
- 1/4 cup brown sugar (can use a Splenda blend to save a point per serving)
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp olive oil
Heat oven to 350°.
In a bowl, combine the brown sugar and spices. Rub the mix on both sides of each pork chop until completely coated being sure to use all of the rub.
Using an oven safe skillet (cast iron or Le Creuset works well), heat the oil over medium-high heat. When the oil is hot, add the pork chops. Cook the chops for about 5 minutes on each side until they are browned. Transfer the skillet to the oven and cook for an additional 5 minutes until the chops are cooked through. Remove from the oven.
Before serving, drag each chop around in the glaze that has formed in the pan.
